Creole-Style Soup
- 2 lb. beef stew meat
- 1 lb. summer sausage
- 3 cans tomato sauce or tomatoes
- 2 qt. beef broth
- 4 cans red beans (not kidney beans)
- 4 small onions, chopped
- 1 large can tomato juice
- Adolph's tenderizer
- salt and pepper
- red pepper
- paprika
- chili powder
- garlic
- sugar
- Minute rice
- Cajun seasoning (optional)
- Cut stew meat small; cook in tap water with tenderizer for about 1 hour or until tender.
- Add sausage, beef broth, tomato sauce, chopped onions, tomato juice and red beans.
- Add seasoning and red pepper to taste.
- Continue to cook while adding ingredients.
- Add Minute rice slowly to reach desired thickness.
