Red Beans And Rice

  1. Cover beans with cold water in a large mixing bowl.
  2. Let soak overnight.
  3. Drain beans and discard soaking water.
  4. Place in large cooking pot with sausage slices, onion, celery, pepper, garlic, parsley and bay leaves.
  5. Cover with water and bring to a boil. Reduce heat and simmer, uncovered, for 2 hours, stirring occasionally.
  6. Add salt, black pepper, hot pepper sauce and Worcestershire sauce.
  7. Cook 30 minutes longer or until beans test done.
