Fluffy Strawberry Pie

  1. Chill the can of evaporated milk for 1 hour.
  2. Beat egg yolks and combine in a heavy 1-quart saucepan with strawberries, water, sugar, salt and lemon juice.
  3. Cook over medium heat, stirring constantly, until mixture comes to a full, all-over boil.
  4. Remove from heat and add Jell-O, stirring until dissolved.
  5. Chill until mixture is thick but not set.
  6. Beat egg whites until stiff; set aside.
  7. Beat evaporated milk until stiff.
  8. Combine with egg whites and fold into the chilled strawberry mixture.
  9. Pour in crusts and chill until ready to serve.
