Fluffy Strawberry Pie
- 1 small can Pet evaporated milk
- 2 eggs, separated
- 1 (10 oz.) pkg. frozen strawberries, partially thawed
- 1/4 c. water
- 1/3 c. sugar
- 1/4 tsp. salt
- 1 Tbsp. lemon juice
- 1 (3 oz.) pkg. strawberry Jell-O
- 2 graham cracker pie crusts
- Chill the can of evaporated milk for 1 hour.
- Beat egg yolks and combine in a heavy 1-quart saucepan with strawberries, water, sugar, salt and lemon juice.
- Cook over medium heat, stirring constantly, until mixture comes to a full, all-over boil.
- Remove from heat and add Jell-O, stirring until dissolved.
- Chill until mixture is thick but not set.
- Beat egg whites until stiff; set aside.
- Beat evaporated milk until stiff.
- Combine with egg whites and fold into the chilled strawberry mixture.
- Pour in crusts and chill until ready to serve.
