Perfect Peach Cobble Up
- 1 c. biscuit mix
- 1/4 c. packed dark brown sugar
- 1/2 tsp. ground nutmeg
- 1 tsp. ground cinnamon
- 1 Tbsp. reduced-calorie margarine, softened
- 1/3 c. fat-free milk
- cooking spray
- 1 can sliced peaches (in own juice; 16 oz.), drain and reserve juice
- Preheat oven to 400u0b0. In a large mixing bowl, combine biscuit mix, brown sugar, nutmeg and cinnamon. Using an electric mixer on low, mix in softened margarine until mixture is crumbly. Add milk and blend thoroughly. Spread batter evenly on bottom of an 8-inch square pan coated with cooking spray. Place peach slices on top of batter. Pour reserved juice evenly over peaches. Bake for 30 minutes. Slice into 9 equal squares. Refrigerate leftovers, then reheat before serving. Makes 9 servings.
