Tomato Basil Pasta
- 1 lb. spiral pasta
- 6 medium tomatoes
- 4 cloves garlic
- 1/2 c. olive oil
- 1 Tbsp. salt
- pepper to taste
- 1/2 c. pesto sauce or 1 large bunch fresh basil, chopped
- 1 c. Romano or Parmesan cheese
- In a large 8-quart pot, boil water with a pinch of salt.
- In a separate large skillet, mince garlic in food processor.
- Add to skillet with oil.
- Dice tomatoes to small chunks. Heat oil and warm garlic.
- Do not burn garlic.
- Add tomatoes, basil, salt and pepper.
- Toss lightly, about 2 minutes.
- Tomatoes should just be heated through.
- Set aside.
- Cook pasta al dente.
- Drain pasta, leaving about 1 cup of pasta water and add tomato/basil.
- Sprinkle cheese and enjoy!
- Serves 4 as an entree.
- Great as a side dish. Serve hot or cold!
