Tomato Basil Pasta

  1. In a large 8-quart pot, boil water with a pinch of salt.
  2. In a separate large skillet, mince garlic in food processor.
  3. Add to skillet with oil.
  4. Dice tomatoes to small chunks. Heat oil and warm garlic.
  5. Do not burn garlic.
  6. Add tomatoes, basil, salt and pepper.
  7. Toss lightly, about 2 minutes.
  8. Tomatoes should just be heated through.
  9. Set aside.
  10. Cook pasta al dente.
  11. Drain pasta, leaving about 1 cup of pasta water and add tomato/basil.
  12. Sprinkle cheese and enjoy!
  13. Serves 4 as an entree.
  14. Great as a side dish. Serve hot or cold!
