Baked Salmon Filets(Serves 4)
- 4 salmon filet pieces (8 oz. each)
- 2 Tbsp. Dijon mustard
- 1 tsp. fresh lemon juice
- 1 green onion, finely chopped
- 1 Tbsp. chopped cilantro
- 2 dashes hot pepper sauce
- finely ground white pepper
- 1 scant c. dry, coarse bread crumbs
- 1/4 c. dry white wine
- 4 sprigs cilantro
- 4 lemon slices
- Place salmon in shallow nonstick (or lightly oiled metal) baking dish.
- Mix together mustard, lemon juice, green onion, chopped cilantro, hot pepper sauce and white pepper.
- Arrange evenly over salmon, spreading to cover top surface with spatula. Sprinkle evenly with bread crumbs.
- Bake in preheated 425u0b0 oven for 10 minutes.
- Add wine to corners of pan (not on top of fish). Continue baking 5 minutes, or until fish begins to flake when tested with a fork.
- Serve immediately garnished with cilantro sprigs and lemon slices.
