Hot Three-Bean Casserole
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 cup celery, chopped
- 2 garlic cloves, minced
- 1 (15 ounce) can garbanzo beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 cup chopped tomato
- 1 (8 ounce) can tomato sauce
- 1 cup water
- 1 jalapeno pepper, minced
- 1 tablespoon chili powder
- 2 teaspoons sugar
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon black pepper
- 2 1/2 cups frozen cut green beans
- Heat olive oil in large skillet over medium heat until hot. Add onions, celery and garlic. Cook and stir 5 minutes or until onions are translucent.
- Add remaining ingredients except green beans. Simmer, uncovered, 10 minutes or until green beans are just tender.
