Chocolate Zucchini Cake
- 1 stick butter, softened
- 1/2 c. oil
- 1 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. buttermilk or sour milk
- 2 1/2 c. flour
- 1 tsp. soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 4 Tbsp. cocoa
- 1 tsp. cinnamon
- 1/2 c. nuts, chopped
- 1/2 c. chocolate bits
- 2 c. grated zucchini, packed
- In large bowl cream together butter, oil and sugar.
- Add eggs; beat one at a time.
- Blend in vanilla and milk.
- Sift together flour, soda, powder, salt, cocoa and cinnamon and add to first mixture.
- Mix well.
- Add zucchini; stir well.
- Turn into 9 x 13 x 2-inch greased and floured pan.
- Sprinkle on top nuts and chocolate bits.
- Bake at 325u0b0 for 45 minutes or until done.
