Chili Vesuvius
- 1 1/2 lb. hamburger (lean)
- 1 (28 oz.) can crushed tomatoes
- 1 (14 1/2 oz.) can stewed tomatoes
- 3 (15 oz.) cans dark red kidney beans
- 1 (16 oz.) bottle hot salsa
- 1 (10 oz.) can diced tomatoes with green chiles
- 3 stalks celery, diced
- 1 medium onion, diced
- 1 green pepper, diced
- 2 tsp. sugar
- 1 tsp. cayenne pepper
- 6 tsp. good quality chili powder or to taste
- 2 cloves crushed garlic
- 1 tsp. each: basil and oregano
- 2 Tbsp. olive oil
- Brown hamburger; drain fat.
- Saute garlic and vegetables in olive oil.
- Combine drained hamburger with tomatoes, beans and salsa.
- Add spices and herbs, including salt and pepper to taste. Add sauteed vegetables; do not drain olive oil, add to mixture. Bring to boil; reduce heat and simmer 1 to 2 hours to suit. Serves 10+ hearty appetites.
- Serve with Italian bread.
