Turkey And Spinach Quiche
- 1 unbaked 9-inch pastry shell or pie crust
- 1 1/2 c. chopped cooked turkey
- 1 c. shredded Swiss cheese
- 1/2 pkg. frozen chopped spinach, cooked and drained (1/2 c.)
- 1/4 c. chopped onion
- 2 eggs, lightly beaten
- 3/4 c. mayonnaise
- 3/4 c. milk
- 1/2 tsp. dried basil leaves
- 1/8 tsp. pepper
- Place pie crust in a 1 1/2-inch deep quiche dish.
- Pierce pastry shell thoroughly with fork.
- Bake in 375u0b0 oven 10 minutes; remove.
- Set oven at 350u0b0.
- In large bowl, toss together turkey, cheese, spinach and onion; spoon into pastry shell.
- In small bowl, stir together eggs, mayonnaise, milk, basil and pepper until smooth.
- Pour over turkey mixture.
- Bake at 350u0b0 for 40 minutes or until golden and knife inserted in center comes out clean.
- Makes 6 servings.
- This is perfect for using up the last few pieces of leftover turkey.
