Curried Chicken

  1. Cut chicken into pieces small enough to saute easily in about an hour.
  2. Saute onion in oil until tender.
  3. Add curry and stir. Add 1/2 cup warm water.
  4. Stir in garlic, ginger, salt, chili and tomato.
  5. Cook until tomato is slightly soft.
  6. Add more warm water if needed.
  7. Add chicken, one piece at a time and coat with curry sauce.
  8. Add more warm water when all chicken pieces are in.
  9. It should be approximately 1 to 2 cups.
  10. Turn and simmer chicken, cooking on low heat about an hour until done.
  11. Before serving, add chopped coriander.
  12. Serve over rice or nan.
