Curried Chicken
- 1 chicken, cut in pieces or 4 chicken legs and thighs or 4 chicken breasts, cut in halves
- 2 onions, chopped
- 1 tomato, chopped
- 2 Tbsp. curry masala
- 1 large chili
- 3 Tbsp. coriander
- 1 to 2 cloves chopped garlic
- 1 to 2 Tbsp. fresh chopped ginger
- 2 tsp. salt
- 4 to 5 Tbsp. oil
- 1 to 2 c. warm water
- Cut chicken into pieces small enough to saute easily in about an hour.
- Saute onion in oil until tender.
- Add curry and stir. Add 1/2 cup warm water.
- Stir in garlic, ginger, salt, chili and tomato.
- Cook until tomato is slightly soft.
- Add more warm water if needed.
- Add chicken, one piece at a time and coat with curry sauce.
- Add more warm water when all chicken pieces are in.
- It should be approximately 1 to 2 cups.
- Turn and simmer chicken, cooking on low heat about an hour until done.
- Before serving, add chopped coriander.
- Serve over rice or nan.
