Ham And Sausage Jambalaya
- 2/3 Cup Vegetable Oil
- 2 Med Onions Chopped
- 1 Med Green Bell Pepper Chopped
- 3 Celery Stalks Chopped
- 5 Med Cloves Garlic Minced
- 1 lb. Ham Cut into Bite Size Pieces
- 1-1/2 lb. Sliced Smoked Sausage (Kielbasa or Andouie)
- 1 lb. Shrimp
- 2 Cups Long Grain White Rice
- 2 Large Tomatoes Chopped
- 3 Cups Beef Stock
- 1/2 tsp. Fresh Black Pepper
- 1/4 tsp. Cayenne Pepper
- Salt to Taste
- 12 Green Onions Chopped
- 1/2 Cup Minced Parsley
- In large heavy pot heat oil, add onion, pepper, celery, and garlic.
- Cook for about 5 minutes.
- Add ham and sausage, cook until sausage is light brown (8 minutes).
- Add rice, cook 5 minutes-add tomatoes, beef broth and seasoning.
- Reduce heat. Cover and simmer until rice is tender and liquid is reduced (about 45 minutes).
- Add shrimp, simmer 5-10 minutes.
- Stir in parsley and green onion.
- Serve hot. (6-8 dinner size servings).
