Ham And Sausage Jambalaya

  1. In large heavy pot heat oil, add onion, pepper, celery, and garlic.
  2. Cook for about 5 minutes.
  3. Add ham and sausage, cook until sausage is light brown (8 minutes).
  4. Add rice, cook 5 minutes-add tomatoes, beef broth and seasoning.
  5. Reduce heat. Cover and simmer until rice is tender and liquid is reduced (about 45 minutes).
  6. Add shrimp, simmer 5-10 minutes.
  7. Stir in parsley and green onion.
  8. Serve hot. (6-8 dinner size servings).
