Wild Mushroom Pasta(Serves 4)
- 3 Tbsp. olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, finely chopped
- 2 Tbsp. parsley, finely chopped
- 2 c. coarsely chopped tomato
- 4 c. assorted mushrooms
- salt to taste
- 1 lb. penne
- 4 c. sliced, fresh mushrooms (shiitake, morel, oyster and/or best of all, portabella)
- 2 red or green peppers, cut into strips
- 1 medium onion, cut into thin wedges
- 1/4 c. margarine or butter
- 1/4 tsp. seasoned salt
- 1/4 tsp. pepper
- hot cooked pasta
- shaved or grated Parmesan cheese
- In a large skillet, cook mushrooms, peppers and onion in hot margarine or butter until tender.
- Stir in salt and pepper.
- Toss with hot pasta.
- Top with cheese.
