Ranger Cookies
- 1/2 c. margarine or butter
- 1 1/4 c. flour
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 2 c. Rice Krispies cereal or 1 c. rolled oats
- 1 (3 1/2 oz.) can flaked coconut (1 1/3 c.)
- 1 c. raisins
- Preheat oven to 375u0b0.
- Beat margarine or butter with an electric mixer on medium speed for 30 seconds.
- Add 1/2 of flour, the sugars, egg, vanilla, baking powder and soda.
- Beat until mixed good.
- Beat in remaining flour.
- Stir in cereal, coconut and raisins.
- Drop by rounded teaspoonfuls onto an ungreased cookie sheet.
- Bake at 375u0b0 for 8 to 10 minutes.
- Cool on cookie sheet 1 minute.
- Remove and cool on rack.
- Makes about 54.
