Faux Carrot Cake Muffins With Cream Cheese

  1. Preheat oven to 375u0b0.
  2. Spray a six count muffin pan heavily with vegetable oil spray.
  3. Mix together 1 Tbsp. each of baking mix and wheat bran and sprinkle over the sprayed muffin pan, coating each cup well.
  4. This will prevent sticking.
  5. Mix the remaining ingredients by hand with a wire whisk until blended. Divide the mixture evenly into the six muffin cups.
  6. Bake for approximately 20-25 minutes.
  7. To test if done: They should be browned and done when a wooden toothpick inserted in the center comes out clean.
