Baked Chicken, Broccoli And Rice
- 1 can condensed cream of chicken and broccoli soup
- 1 1/2 c. water or milk
- 3/4 c. regular long grain rice, uncooked
- 4 chicken breast halves
- salt, pepper and paprika to taste
- 1 can French fried onion rings, divided
- In a 2-quart baking dish, combine soup, rice and water or milk.
- Add about half the onion rings, slightly crumbled.
- Arrange chicken on top of rice mixture and season with salt, pepper and paprika.
- Bake at 375u0b0 for 1 hour or until chicken is no longer pink and juices run clear.
- Top with rest of onion rings and return to oven for 10 minutes longer.
- Can use skim milk.
- Red pepper may perk up sauce.
- I baked chicken and rice for 1 hour and when I added the onion rings on top and put back in oven for 10 minutes, I left uncovered.
