Parmesan Bread With Red Peppers And Mushrooms
- 1 c. sweet red pepper, coarsely chopped
- 1/2 medium onion, coarsely chopped
- 1/2 c. mushrooms, sliced
- 1 Tbsp. olive oil
- 2 (1/4 oz. each) pkg. regular or fast rising yeast
- 1 Tbsp. sugar
- 1 1/2 c. warm water (110~)
- 1 egg
- 3 to 4 c. all-purpose flour
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/8 tsp. black pepper
- milk
- 2 Tbsp. Parmesan cheese
- Saute vegetables in olive oil until crisp and tender.
- Cool. In a large bowl, stir yeast and sugar in warm water.
- Let stand 5 minutes.
- Stir in egg.
- Mix in 3 cups flour, 1/4 cup cheese, salt, cayenne pepper and black pepper.
- Mix in cooled vegetables and enough remaining flour to make a soft dough.
- Knead dough on a floured surface until smooth and elastic, about 10 minutes.
