- 2 lb. dry codfish (boneless if possible)
- 3 lb. white potatoes, cooked, mashed and cooled
- 1 onion, finely chopped or grated
- 1 Tbsp. parsley
- 1/2 stick butter or margarine, at room temperature
- 2 large eggs, beaten
- 1 tsp. baking powder
- salt and pepper to taste (optional)
- Soak codfish overnight.
- The next morning, drain off water. Place codfish in saucepan; cover with fresh water and bring to boiling.
- Boil until tender (about 45 minutes to an hour).
- Drain and cool.
- If not boneless, debone codfish, flaking with a fork as you go along.
- Add cooked, mashed potatoes, butter, onion, parsley, baking powder and eggs.
- Salt and pepper, if desired. Combine and mash mixture with a large fork or beat with electric mixer.
- Shape into cakes or balls.
- Deep fry in hot oil until golden brown all around.
