Sugar 'N Spice Nuts
- 3 c. unsalted peanuts
- 1 egg white
- 1 Tbsp. orange juice or water
- 2/3 c. sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground allspice
- 1/4 tsp. salt
- Heat oven to 375u0b0.
- In a large bowl, place nuts; set aside. In a small bowl, beat egg white and orange juice or water until frothy.
- Add sugar, spices and salt; mix well.
- Pour over nuts, stirring to coat well.
- On a greased jelly roll pan or large shallow roasting pan, spread nuts so they do not touch.
- Bake, stirring every 15 minutes, until light brown and crisp, 45 to 55 minutes.
- Cool.
- Store in an airtight container in a cool place up to 1 month.
- Makes about 5 cups.
- When placed in decorative container, they make a great gift.
