Fish And Cheese Chowder

  1. Thaw frozen fish (enough to allow cutting).
  2. Cut fish into 1-inch cubes.
  3. Melt butter in a large saucepan.
  4. Add onion, carrot and celery.
  5. Cook until onion is transparent.
  6. Blend in flour, salt and paprika.
  7. Cook 1 minute, stirring constantly.
  8. Gradually add chicken broth and milk.
  9. Cook, stirring constantly until thickened.
  10. Add fish.
  11. Simmer until fish flakes easily (5 minutes for fresh, 10 minutes for frozen).
  12. Add cheese; stir until melted. Serve hot.
  13. Makes 2 1/2 quarts.
