Apple Cranberry Relish
- 1 c. cranberries
- 2 medium Granny Smith apples
- 1 c. sugar
- 1 c. white wine vinegar
- 1 medium Spanish onion, diced
- 1 lemon
- 1/8 tsp. ground cinnamon
- 1/4 tsp. whole mustard seed
- 2 whole cloves
- 1/2 tsp. kosher salt
- Rinse and drain cranberries.
- Peel, core and dice apples.
- In medium stainless steel saucepan, combine sugar, vinegar, onion and apples. Trim ends from lemon, cut in half crosswise, seed and dice.
- Add lemon, cinnamon, mustard seed, cloves and salt to apple mixture.
- Place saucepan over medium heat. Bring to simmer.
- Lower heat and simmer 10 minutes, stirring every few minutes.
- Add cranberries and simmer 5 more minutes. Cool and refrigerate. Makes 3 cups.
