Miracle Rolls
- 3 pkg. active dry yeast (1/4 oz. each)
- 1/2 c. warm water (110~ to 115~)
- 5 c. self-rising flour
- 1/4 c. sugar
- 1 tsp. baking soda
- 1 c. shortening (Crisco)
- 2 c. warm buttermilk
- Dissolve yeast and sugar in warm water; set aside.
- In a large mixing bowl, combine flour and baking soda.
- Cut in shortening with pastry blender until mixture resembles coarse meal.
- Stir in yeast and sugar mixture and buttermilk.
- Mix well.
- Turn out on lightly floured surface.
- Knead lightly a few times.
- Roll to 1/2-inch thickness.
- Cut with biscuit cutter.
- Place on lightly greased baking sheet.
- Let rise in warm place about 45 minutes.
- (Can make dough night before and refrigerate.
- Next day, punch down, shape rolls; let rise and bake.)
- Bake at 400u0b0 for 10 minutes.
- Yields 4 dozen.
