Stuffed Baked Potatoes

  1. Bake potatoes at 400u0b0 for 1 hour or until tender.
  2. Reduce heat to 375u0b0.
  3. Cut each potato in half lengthwise; scoop out the pulp, leaving a thin shell.
  4. In a large mixing bowl, beat the pulp with butter.
  5. Stir in 1 cup of cheese, sour cream, salad dressing mix, chives and garlic.
  6. Spoon into potato shells.
  7. Sprinkle with remaining cheese.
  8. Place on a baking sheet.
  9. Bake for 15-20 minutes or until heated through.
  10. Top with bacon and green onions.
