Gourmet Chili
- 1 lb. lean ground beef or chicken
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 (28 oz.) can stewed tomatoes
- 1 1/2 c. water
- 1 (12 oz.) can tomato paste
- 2 tsp. chili powder
- 1 1/2 tsp. salt
- 1 1/2 tsp. coriander
- 1 tsp. cumin
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 2 tsp. wine vinegar
- 1 Hershey bar
- 1 large clove garlic, crushed
- 1 (16 oz.) can kidney beans, drained
- In large kettle over medium heat, cook beef until crumbly. Add onion and pepper; saute until tender.
- Stir in tomatoes, water, tomato paste, chili powder, salt, coriander, thyme, oregano, wine vinegar, chocolate and garlic.
- Simmer 2 hours or until thickened.
- Add beans; cook 15 minutes longer.
