Herbed Parmesan Chicken
- 3 lb. chicken breast, skinned and boned
- 1/4 tsp. garlic powder
- 1/8 tsp. dried thyme
- 1/4 c. freshly grated Parmesan cheese
- 1 Tbsp. minced fresh parsley
- 1/3 c. fine bread crumbs
- 1/4 tsp. paprika
- 1 Tbsp. vegetable oil
- 2 Tbsp. margarine
- 1/2 c. Marsala wine
- Cut chicken breast into pieces 1 1/2 to 2 inches wide.
- Combine next 6 ingredients in a paper bag.
- Coat chicken with mixture a few pieces at a time by shaking bag.
- Place chicken in a baking dish and press any remaining seasoning into chicken.
- Sprinkle chicken with oil and melted butter.
- Bake, uncovered, at 350u0b0 for 30 minutes.
- Pour wine over chicken and cover with foil.
- Reduce heat to 325u0b0.
- Bake 15 minutes.
- Remove foil.
- Raise heat to 350u0b0 and bake 10 minutes.
