Chicken Cacciatore Or Hunter'S Chicken
- 4 lbs chicken, cut up
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 1 green pepper, sliced
- 2 garlic cloves, crushed
- 1/2 cup tomato paste, 1 6 oz.can (the system made me post it this way. It's 1 small can tomato paste)
- 2 cups chicken broth
- 1/2 cup dry white wine
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 teaspoon dried sweet marjoram
- 1/2 teaspoon dried thyme (or more)
- 1 -2 teaspoon dried basil
- 1 cup sliced mushrooms (optional)
- 2 tablespoons brandy (optional)
- Skin chicken pieces and brown in hot olive oil.
- Remove chicken.
- Saute onion, green pepper, optional mushrooms, and garlic.
- Add all remaining ingredients. Stir to combine.
- Simmer, covered, about 1 hour.
- Serve over hot cooked pasta.
