Large Shells
- 2 (10 oz.) boxes frozen spinach, thawed and squeezed
- 1 clove garlic, finely chopped
- 1 medium onion, finely chopped
- 10 oz. grated Mozzarella cheese
- 3 c. cottage cheese
- 1/2 c. Parmesan cheese
- 1/4 c. parsley
- 1 egg, beaten
- 1/2 tsp. nutmeg
- oregano to taste
- salt and pepper to taste
- spaghetti sauce
- 1 pkg. large shells
- 1 Tbsp. olive oil
- Cook pasta according to package directions.
- Drain.
- Gently toss with olive oil. Cover and set aside.
- Mix spinach, garlic, onion, cheeses, parsley, egg, spices and seasonings.
- Pour enough spaghetti sauce in 9 x 13-inch pan to sparingly cover bottom. Gently fill shells with spinach mixture, and place side by side in pan.
- Spoon more sauce over all.
- Cover with foil.
- Bake 30 minutes at 350u0b0.
- Uncover.
- Sprinkle with more Mozzarella if desired, and bake 10 more minutes.
