Coffee Chocolate Chunk Cookies
- 1/4 c. instant coffee powder
- 2 Tbsp. boiling water
- 1 1/2 c. all-purpose flour
- 1/4 tsp. baking soda
- 1 1/2 sticks unsalted butter, softened
- 3/4 c. granulated sugar
- 1/2 c. firmly packed light brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 (8 oz.) pkg. semi-sweet chocolate, cut into chunks
- 1 1/2 c. chopped walnuts
- Mix coffee with boiling water; let stand 15 minutes.
- Mix flour and baking soda; set aside.
- Beat butter and sugars until light and fluffy.
- Mix in coffee, egg and vanilla.
- Stir in flour mixture until well blended.
- Add chocolate and nuts; stir until evenly distributed.
- Chill 30 minutes.
- Roll dough into 1-inch balls.
- Place 2 inches apart on baking sheet.
- Bake at 325u0b0 for 10 to 12 minutes.
