Crawfish Quiche
- 1 lb. cleaned crawfish tails
- 1 c. sliced, fresh mushrooms
- 1 c. chopped green onions and tops
- 1/2 c. melted butter
- 4 eggs, well beaten
- 1/2 c. half and half milk or light cream
- 1 tsp. salt
- 1/2 tsp. dry mustard
- 1 c. shredded Mozzarella cheese
- 1 unbaked 9-inch deep pie shell
- Saute mushrooms and green onions in butter until tender.
- Set aside.
- In large bowl, combine eggs, half and half, salt, dry mustard and cheese.
- Fold in crawfish, mushrooms and onions.
- Pour mixture into shell.
- Bake at 400u0b0 for 15 minutes.
- Reduce heat to 300u0b0 and continue to bake for 30 minutes or until knife inserted in center comes out clean.
- Allow to stand 5 minutes before serving.
- Serves 6.
