Crawfish Quiche

  1. Saute mushrooms and green onions in butter until tender.
  2. Set aside.
  3. In large bowl, combine eggs, half and half, salt, dry mustard and cheese.
  4. Fold in crawfish, mushrooms and onions.
  5. Pour mixture into shell.
  6. Bake at 400u0b0 for 15 minutes.
  7. Reduce heat to 300u0b0 and continue to bake for 30 minutes or until knife inserted in center comes out clean.
  8. Allow to stand 5 minutes before serving.
  9. Serves 6.
