Hunter-Style Lamb Stew
- vegetable cooking spray
- 1 lb. boneless lamb, cut in 3/4-inch cubes
- 2 garlic cloves, minced
- 3/4 c. apple juice or dry red wine
- 1 c. low salt chicken broth, divided
- 1/2 tsp. dried rosemary, crushed
- 1/4 tsp. ground pepper
- 1/8 tsp. ground sage
- 2 Tbsp. all-purpose flour
- 3 c. hot cooked linguine
- 2 Tbsp. chopped parsley (optional)
- Spray a large skillet or saucepan with cooking spray; place over medium-high heat.
- Add lamb cubes and garlic; cook 5 minutes, or until lamb is evenly browned, stirring frequently.
- Add apple juice, 1/2 cup broth, rosemary, pepper and sage; bring to a boil. Reduce heat to low; cover and simmer 1 hour, or until lamb is tender.
