My Grandmother'S Apple Macaroon
- FILLING
- 4 apples (I prefer Granny Smith)
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 cup pecans, Chopped (I like mine coarsely chopped)
- BATTER
- 2 eggs, well beaten
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 3/4 cup shortening (I prefer the butter flavored type)
- 3/4 cup butter, Softened
- FILLING:.
- Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
- Mix together the sugar and cinnamon then sprinkle over the sliced apples.
- Next sprinkle on the chopped pecans.
- BATTER:.
- Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
- Spread on top of filling.
- Bake at 300 until crust crisps approximately 45 minutes to 1 hour.
