Cinnamon Raisin Biscuits
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 1/2 Tbsp. sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 3 Tbsp. chilled stick margarine, cut into small pieces
- 1/2 c. raisins
- 3/4 c. low-fat buttermilk
- 1/2 c. sifted powdered sugar
- 1 Tbsp. 1% low-fat milk
- Combine first 5 ingredients in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal.
- Add raisins; toss well.
- Add 3/4 cup milk; stir just until dry ingredients are moistened.
- Turn dough out onto a heavily floured surface; knead dough 4 or 5 times.
- Roll dough to a 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter.
- Place on a baking sheet.
- Bake at 450u0b0 for 11 minutes, or until golden.
- Combine powdered sugar and 1 tablespoon milk; stir well.
- Drizzle over biscuits.
- Yields 1 dozen.
