Easy Beefy Bean Bake
- 1/4 lb. bacon, diced
- 1 lb. lean ground beef
- 1 medium onion, peeled, ends removed and chopped
- 2/3 c. hickory flavor barbecue sauce
- 2 Tbsp. prepared yellow mustard
- 2 tsp. Worcestershire sauce
- 32 oz. canned baked beans, fat rind removed (undrained)
- 29 oz. canned pinto beans, rinsed and drained
- 3 c. fresh mustard greens, Swiss chard or spinach, washed, dried and chopped
- Preheat oven to 350u0b0.
- In a 2 1/2-quart ovenproof skillet or flameproof casserole, cook bacon, beef and onion over medium-high heat on top of the stove, stirring occasionally, until bacon is crisp and beef is browned, about 5 to 7 minutes.
- Drain off excess fat.
- Stir in barbecue sauce, mustard and Worcestershire sauce until well blended.
- Add baked beans, pinto beans and mustard greens, Swiss chard or spinach.
- Stir gently to mix.
- Bake, uncovered, for 35 to 45 minutes, or until very hot in center and bubbly.
- Remove from oven and serve.
- Serves 6.
