New York Cheese Cake(Serves 12)

• 4 egg whites
• 1 c. sugar
• 24 oz. cream cheese, softened
• 1 tsp. vanilla
• 2 c. graham cracker crumbs
• 6 Tbsp. butter
• 4 oz. sour cream
• 3 tsp. sugar
• 18 oz. semi-sweet chocolate
• 24 oz. cream cheese
• 3 tsp. vanilla
• 3/4 c. sugar
• 6 eggs, separated
• pinch of salt
• 3 c. heavy cream
• 2 pkg. Nabisco chocolate wafer cookies, crushed
• 2 sticks sweet butter
• 1 c. chopped walnuts
• 1/2 c. sugar
• Kahlua to taste (optional)

1. Melt chocolate.
2. Set aside.
3. Whip the cream cheese; add vanilla, Kahlua, 3/4 cup sugar and egg yolks.
4. Blend in chocolate.
