Chicken Fajitas
- 4 (3 oz. each) skinned boneless chicken breast halves
- 1/3 c. lemon juice
- 2 Tbsp. vegetable oil
- 2 cloves garlic, finely chopped
- 2 tsp. instant chicken bouillon
- 4 flour tortillas, warmed
- shredded cheese
- sour cream
- chopped tomatoes
- shredded lettuce
- chopped onion
- olives
- In a plastic bag combine lemon juice, oil, garlic and bouillon. Add chicken (I like to cut my chicken into strips).
- Marinate in refrigerator 4 hours or overnight.
- Remove chicken from marinade; grill, broil or quick-fry basting with marinade.
- Slice into strips after cooking if marinated whole.
- Place chicken strips on warmed tortillas.
- Top with cheese.
- Garnish as desired.
- Fold and serve immediately.
