I'Ve Got A Secret Cake
- 3 eggs
- 2 c. sugar
- 1 1/2 c. oil
- 2 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. cottage cheese (small curd)
- 1 c. Harvard beets (undrained), diced small
- 1 c. crushed pineapple, drained
- 1 c. coconut
- 1 c. chopped nuts
- Beat eggs, sugar, oil and vanilla.
- Mix flour, cinnamon, baking soda and salt.
- Stir into egg mixture.
- Add cottage cheese, beets, pineapple, coconut and nuts, mixing well after each addition.
- Beat for 1 minute.
- Pour into greased and floured 9 x 13-inch cake pan (pan will be very full).
- Bake in 350u0b0 oven for 55 minutes (cake gets very brown).
- Cool and frost with favorite icing.
