Breakfast Muffin Bars
- 1 1/2 cups all-purpose flour
- 1 1/2 cups all-bran cereal
- 1/3 cup sesame seeds
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1 egg
- 3/4 cup buttermilk
- 1/2 cup packed brown sugar
- 1/3 cup vegetable oil
- 2 tablespoons molasses
- 1 1/2 cups finely grated carrots
- 1/2 cup chopped dates
- MIX flour, cereal, sesame seeds, baking powder, cinnamon, allspice, baking soda and salt in large bowl.
- WHISK together egg, buttermilk, brown sugar, vegetable oil and molasses.
- STIR liquid mixture into dry ingredients, stirring just until moistened.
- Fold in carrots and dates.
- Spread evenly in greased 13 x 9 inch baking pan.
- Bake at 350u0b0F for 25 to 30 minutes or until centre springs back when gently touched.
- Cool on rack.
- Cut into bars.
- Store in airtight container.
