Vegetarian Chili
- 1 stalk celery, chopped
- 1 large green pepper, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3/4 c. bulgur
- 1 1/2 c. water or bouillon powder
- 16 oz. tomatoes or V-8 juice
- 2 Tbsp. tomato paste
- 2 (15 oz.) cans kidney beans, drained and rinsed
- 1/2 tsp. oregano
- 1/2 tsp. cumin
- 2 Tbsp. chili powder
- 1 Tbsp. chili powder
- 1 Tbsp. soy sauce
- Saute celery, green pepper, onion and garlic in cooking spray for two to three minutes.
- Add bulgur, bouillon, tomato juice, tomato paste, spices and soy sauce.
- Bring to boil; cover and simmer on low for 20 minutes.
- Add beans.
- Cook gently until desired consistency.
- Makes 8 to 10 servings.
- One gram of fat per serving.
