Lo-Fat Beef Stew

  1. Spray roaster with cooking spray or use 1 tablespoon canola oil.
  2. On medium-high brown lean beef, stirring slowly to keep from scorching.
  3. When meat is browned, add salt, pepper, garlic and about 1 quart water.
  4. Cook on medium until meat is tender (approximately 1 1/2 hours).
  5. Add fresh carrots and cook 1/2 hour more; then add potatoes and tomatoes to sauce.
  6. Cook until potatoes are done.
  7. Serve with baked cornbread and fresh tossed salad. Good!
