Zeeks Sausage
- 4 lb. Italian sausage
- 1 bunch chopped parsley
- 1 garlic bulb, chopped
- 2 chopped onions
- 2 small cans tomato paste
- 3 large cans whole packed tomatoes
- 2 lb. mushrooms
- 2 (3 oz.) pkg. wide noodles
- 1 lb. Mozzarella cheese
- 4 eggs
- Parmesan cheese
- Ricotta cheese
- Break up Italian sausage and brown.
- Add a little parsley, onion and garlic.
- Saute.
- Add tomato paste and whole tomatoes and mushrooms.
- Simmer until it thickens (add water, if needed).
- Mix Ricotta cheese with eggs, a little parsley, garlic, Parmesan and grated cheese.
- Cook noodles; drain.
- Layer in baking dish, starting with sauce, noodles and cheese mixture.
- End up with cheese mixture.
- Bake at 350u0b0 until hot, about 35 to 40 minutes.
