Chewy Chocolate Oatmeal Cookies
- 1 c. (2 sticks) butter or margarine, softened
- 1 1/2 c. granulated sugar
- 1 c. packed light brown sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 1/2 c. all-purpose flour
- 1/2 c. Hershey's cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 c. quick cooking or regular rolled oats
- 1/2 c. chopped nuts
- Heat oven to 350u0b0.
- In large mixer bowl, beat butter and sugars until light and fluffy.
- Blend in eggs and vanilla.
- In separate bowl, stir together flour, cocoa, baking soda and salt. Gradually add to butter mixture, mixing well.
- Stir in oats and nuts (batter will be stiff).
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake for 11 to 12 minutes, or until set; cookies will be slightly moist in center.
- Do not overbake.
- Cool 1 minute; remove from cookie sheet to wire rack.
- Cool completely. Makes about 4 dozen cookies.
