Squash Loaves
- 3 c. all-purpose flour
- 2 c. sugar
- 2 tsp. baking soda
- 1 tsp. ground cloves
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. salt
- 1/2 tsp. baking powder
- 3 eggs
- 1 (14 oz.) pkg. frozen squash, thawed or 1 1/2 c. grated, raw yellow squash
- 2/3 c. salad oil
- Preheat oven to 350u0b0.
- Grease two 8 1/2 x 4 1/4-inch loaf pans well.
- In a large bowl with fork, mix the first 8 ingredients.
- In medium bowl with fork, beat eggs, squash and salad oil until blended.
- Stir into flour mixture just until flour is moistened. Pour batter into greased pans.
- Bake 1 hour or until toothpick in center comes out clean.
- Cool loaves in pans on wire racks 10 minutes.
- Remove from pans and cool completely on racks.
