French Fried Zucchini
- 3/4 c. flour
- 1 tsp. salt
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- salad oil for frying
- 3/4 c. beer (room temperature)
- 2 eggs, separated
- 2 Tbsp. salad oil
- 3 medium zucchini
- In medium bowl, mix flour, salt, garlic powder and pepper. In small bowl, mix beer, egg yolks and salad oil.
- Add to dry ingredients and stir just until combined (batter will be lumpy). Cover with plastic wrap; set aside for 45 minutes.
- Cut zucchini into 2 1/2 x 1/4-inch julienne strips; set aside.
- Beat egg whites until stiff.
- Fold into batter and dip zucchini in to coat.
- In large saucepan or deep fat fryer, heat 1-inch oil to 375u0b0 on deep fat thermometer.
- Add zucchini a few at a time to hot oil.
- Fry, turning until golden brown.
- Remove with slotted spoon.
- Drain on paper towel.
