Oatmeal Shaggies
- 2 c. Quick Quaker oats (uncooked)
- 1 c. finely shredded carrots
- 1 c. firmly packed brown sugar
- 1 c. raisins
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 2 eggs, beaten
- 1/2 c. butter flavor Crisco, melted and cooled
- 1/3 c. milk
- 1 c. shredded coconut
- 1/2 c. finely chopped walnuts
- Heat oven to 350u0b0.
- Grease baking sheet with butter flavored Crisco.
- Combine oats, carrots, brown sugar and raisins in a large bowl.
- Combine flour, baking powder, salt, cinnamon and cloves. Stir into oat mixture with a spoon.
- Combine eggs, butter flavor Crisco and milk.
- Stir into carrot mixture.
- Stir in coconut and nuts.
