Chicken Biskette Casserole
- 1 c. chopped onion
- 1 stick soft butter
- 1/4 c. water or soy sauce
- 10 oz. chicken broth
- 1 c. flour
- 2 1/2 c. chopped, cooked chicken
- 1 (10 oz.) pkg. frozen mixed vegetables
- 3/4 c. noncooked quick oats oatmeal
- 2 Tbsp. baking powder
- 1/2 c. milk
- 1 egg white
- salt, pepper and garlic to taste
- Preheat oven to 475u0b0.
- Cook onion in 2 tablespoons butter. Add water (or soy sauce), chicken broth, 1/4 cup flour, salt, pepper and garlic.
- Cook approximately 3 minutes, until thickened. Add frozen vegetables and chicken.
- Pour into 2-quart casserole dish.
- Combine remaining flour, oatmeal and baking powder.
- Cut in butter until crumbly.
- Stir in milk and egg white until moist. Drop by tablespoon onto top of chicken mixture.
- Bake 30 to 45 minutes until golden.
