Prince Of Wales Cake
- 3/4 c. butter
- 1 c. sugar
- 2 eggs
- 2 Tbsp. molasses
- 2 1/2 c. sifted cake flour
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. nutmeg
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 egg yolk
- grated rind and juice of 1 lemon
- 1 Tbsp. butter
- Cream the butter and sugar until fluffy.
- Add eggs and molasses; beat thoroughly.
- Sift flour with spices, baking powder, soda and salt.
- Add dry ingredients to creamed mixture alternately in thirds with buttermilk, beating smooth after each addition. Grease two 8-inch cake pans.
- Pour batter in pans.
- Bake at 375u0b0 (you may have to adjust oven heat to 350u0b0) for 30 minutes.
- Take layers out of pans and cool thoroughly on cake racks.
- Assemble layers together with Lemon Filling and frost with Boiled Icing.
