Leftover Turkey Pie
- 4 potatoes, diced
- 2 carrots, sliced
- 1 stalk celery, diced
- 1 onion, chopped
- 1/2 c. Bisquick
- 1/2 c. flour
- 2 Tbsp. parsley
- 1/4 stick butter or margarine
- 2 eggs
- 1 1/2 c. cold mashed potatoes
- leftover turkey and gravy
- leftover peas or other vegetables
- Grease 2-quart baking dish with butter generously.
- Cook first four ingredients together.
- Mix Bisquick, flour, parsley and margarine together.
- Beat eggs; season with salt and pepper and mix with leftover mashed potatoes.
- Add to Bisquick mixture and work together.
- Mixture will be sticky.
- Spoon mixture into dish and using the back of spoon, pat it into bottom and sides of dish. Save some mixture for top.
- Put cold turkey, gravy and peas in dish; add potatoes, carrots, celery and onion.
- Put more turkey and gravy in center.
- Spoon Bisquick mixture around sides, sealing well.
- Let circle in center open.
- Bake at 375u0b0 to 400u0b0 for 1 hour.
