Apple Cheesecake Pie

  1. Combine 2/3 cup sugar, 1/2 teaspoon orange rind, cinnamon, nutmeg, orange juice and butter in large saucepan; bring to boil, stirring until sugar dissolves.
  2. Add apples and simmer just until tender and translucent, about 8 minutes.
  3. Dissolve cornstarch in water; stir into apple mixture.
  4. Cook, stirring, until mixture boils and thickens.
  5. Add lemon juice.
  6. Cool to room temperature. Spoon into baked pie shell.
  7. Whip the cream cheese until fluffy; gradually add 1/3 cup sugar and 1/2 teaspoon orange rind.
  8. Beat in egg.
  9. Spoon over apples; top with almonds and coconut.
  10. Bake at 350u0b0 for 20 minutes or until golden. Chill before serving.
  11. Yield: 6 servings.
