Apple Cheesecake Pie
- 1 c. sugar, divided
- 1 tsp. grated orange rind, divided
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2/3 c. orange juice
- 1/4 c. butter or margarine
- 3 c. thick apple slices
- 4 1/2 tsp. cornstarch
- 4 1/2 tsp. water
- 2 Tbsp. lemon juice
- 1 deep 9-inch pie shell, baked
- 1 (8 oz.) pkg. cream cheese, softened
- 1 egg
- 1/2 c. almonds or pecans, chopped
- 1/2 c. flaked coconut
- Combine 2/3 cup sugar, 1/2 teaspoon orange rind, cinnamon, nutmeg, orange juice and butter in large saucepan; bring to boil, stirring until sugar dissolves.
- Add apples and simmer just until tender and translucent, about 8 minutes.
- Dissolve cornstarch in water; stir into apple mixture.
- Cook, stirring, until mixture boils and thickens.
- Add lemon juice.
- Cool to room temperature. Spoon into baked pie shell.
- Whip the cream cheese until fluffy; gradually add 1/3 cup sugar and 1/2 teaspoon orange rind.
- Beat in egg.
- Spoon over apples; top with almonds and coconut.
- Bake at 350u0b0 for 20 minutes or until golden. Chill before serving.
- Yield: 6 servings.
