Pavlova
- 4 egg whites (at room temperature)
- 1/2 tsp. salt
- 1 c. superfine sugar
- 2 tsp. cornstarch
- 2 tsp. cider vinegar
- 1 1/2 c. heavy cream
- strawberries
- chocolate sauce
- Butter and flour baking sheet.
- Heat oven to 300u0b0.
- Beat whites and salt until soft peaks form.
- Beat in sugar, one tablespoon at a time, beating thoroughly after each addition until smooth and glossy.
- Stir cornstarch and vinegar together in small bowl until smooth.
- Fold into egg whites until blended.
- Scoop whites onto center of baking sheet.
- Spread smoothly forming a circle approximately 8-inch diameter with a slight well in the center. Put on center rack in oven.
- Reduce heat to 250u0b0 until outside is firm and tan.
- Cool on wire rack 15 minutes.
- Remove from sheet. Whip cream with a little sugar.
- Fill center with berries and cream.
- Cover with whipped cream and decorate with strawberries. Drizzle with chocolate sauce.
