Turkey-Rice Meatballs
- 1 c. cooked instant rice
- 1 lb. ground turkey
- 1 egg, slightly beaten
- 1 tsp. parsley
- 1/2 tsp. thyme
- 1/2 tsp. sage
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. minced onion
- 1 Tbsp. olive oil
- 1 can Italian tomato soup
- 1 1/2 cans water (use soup can)
- 1 Tbsp. chicken bouillon
- Prepare rice according to package directions to make one cup cooked rice; set aside to cool.
- Combine ground turkey, egg, parsley, sage, thyme, salt, pepper and onion.
- Mix well.
- Add cooked rice to meat mixture; mix well.
- Shape mixture into 2-inch balls.
- Heat olive oil in large skillet.
- Brown meatballs on all sides.
- Cover and cook about 10 minutes.
- Remove from skillet.
